October is upon us, and this month marks the turning towards Winter in the Northern Hemisphere. The weather has truly shifted where I live in Colorado and many of the plants have gone dormant until the Spring.
This month focuses on the plants that are still here, persisting through the cold nights, that carry us into the Winter. Rose hips can be harvested through the frosts, and will often get sweeter in the cold. Nettles can be incorporated in their dried form to pastas and warm drinks, and plants that have gone to seed like yellow dock, provide us with nutrients throughout the Winter months.
